Now, before you judge me and think "who in their right mind needs a pat of butter the size of Ohio on their pancakes," let me tell you a tragic story. I ran out of butter recently. What a travesty! I never realized how hard it was cook meals without butter. On a Sunday, I texted my neighbor and asked if she had a stick of butter I could use, and she was out of butter, too. If there were ever two people in the world that would have butter, it should be the two of us. When I finally went to the store a few days later, I bought butter, and I think I got a little excited when putting the butter on my pancakes because I had been deprived of it for four days. The horror! These pancakes are great though. And even better with a pat of butter the size of Ohio.
Skinny Pancakes #2source: kinda my own modification of skinny pancakes
1 c flour
1/4 c powdered sugar
1/2 t salt
1/2 t baking soda
1 c milk
2 eggs, beaten
1 t vanilla
Mix the dry ingredients in a bowl. Whisk well. Add the milk, eggs, and vanilla. Mix just until combined.
Preheat a griddle over medium-high heat. Pour about 1/4 c batter onto the griddle. Cook for about 1 minute per side or until golden brown on the bottom. Flip and cook on the other side.
Serve with a pat of butter and warm syrup.
