I can't tell you how many dozens of these I have devoured in my lifetime. My mom and dad have made these pancakes for my brothers and me as long as I can remember. I originally thought that my mom found this recipe, but my dear dad was quick to correct me on the true origin of skinny pancakes. He has been making these since High School! That means that this recipe has been around in my family since the 60s. He also informed me that for a little variation you can add some lemon zest. :)
I love these pancakes! They are way easier than traditional pancakes, they are slightly sweeter, and you can make cool shapes. Wives (or husbands for that matter...) How surprised would your spouse be when you bust out a breakfast that tells him/her you love them? I think it's a sure ticket to smile and a great to start the day.
The recipe is pretty involved.... get ready. Hold on to your hat...
Skinny Pancakes:
1 c flour
1 c milk
2 eggs
1/4 c powdered sugar
1/4 t salt
Piece of pancake, right?! ;) My brothers don't give me the dumb-joke-of-the-day award on a daily basis for nothing.
All you do for this soon-to-be family favorite is:
Combine all the ingredients. Mix until smooth. Pour them onto a hot griddle (medium heat.) Wait about 30 seconds or until golden brown on the bottom side. Flip. Cook the other side for the same amount of time. Done!
If you want to do letters or fancy shapes, use a spoon to make the picture. If your kids and spouses expect perfection in your art, don't attempt this. I made a dinosaur for my son this morning that looked like a giraffe with a giant wooden block for its front legs. (no picture with that one) He loved it though! It's really fun for kids and spouses alike. Heck, even I enjoy a Mickey Mouse shaped pancake every now and again.
My daughter wanted chocolate chips on hers although I don't recommend it because the pancakes aren't thick enough to encase the chocolate chips. I'll post my favorite recipe for those later.
The pancake at the very bottom underneath the heart and flower was supposed to be an airplane. It could have passed for a whale or Lightning McQueen with a construction cone on his head. :)
